Ingredients
12 small strawberries
1 rice cake
1 tablespoon lemon juice
1 Vanilla LA Drink Mix
Instructions
Put rice cake in a little bowl. Prepare LA Drink Mix with 4 ounces water. Then put lemon juice in it. Set strawberries on top of rice cake. Transfer drinks mix over strawberries. Garnish with strawberry on top.
Vegetable Ziti Bake

Ingredients
1/4 cup (60ml / 40g) diced onion
2 garlic cloves, minced
1/4 cup (60ml / 30g) thinly sliced carrots
1/4 cup (60ml / 18g) sliced mushrooms
1/4 cup (60ml / 28g) thinly sliced zucchini
1/2 tsp (2.5ml) garlic powder
1/2 cup (125ml / 28g) fresh spinach
2/3 cup (175ml / 106g) cooked ziti
1/4 cup (60ml) lite tomato sauce
1/2 cup (125ml) part-skim ricotta cheese
1/2 tomato, diced
2oz (56g) part-skim
Mozzarella cheese
Nonfat cooking spray
Preparation
Cover skillet with nonfat cooking spray; heat on average flame. Add onion, garlic and carrots to skillet and sauté it for 1-2 minutes or until onions begin to light brown or soften. Put in mushrooms, zucchini and garlic powder, and sauté it for 2 minutes. Put spinach and cook until soft. Remove vegetables from heat and keep sideways. In large mixing bowl, join ziti, ricotta cheese, tomato sauce and vegetable mixture. Do cover casserole dish with nonfat cooking spray. Transfer ziti mixture into casserole and top with diced tomato. Cover up and bake in 350°F (180°C) oven for 20 minutes. Take out from oven and top with mozzarella cheese. Bake, uncovered, 10 minutes, or until cheese is melted.
Serving size: 1 Cup (250 ML)
